  1. 8 (21 x 21cm) frozen spring roll pastry sheets (Trangs brand)
  2. 2 large ripe bananas, peeled, diced
  3. Vegetable or canola oil, for frying
  4. Icing sugar, to serve

The instruction how to make Banana spring rolls

  1. Place the spring roll pastry sheets in a single layer on a bench and defrost for 10 minutes. Spoon 1/8 of the diced banana onto a pastry sheet to form a 2cm x 10cm rectangle, 5cm from one edge. Fold the pastry over the banana and tightly roll to form a parcel, folding in the ends. Brush the pastry edges with water and press to seal. Repeat with the remaining pastry sheets and banana.
  2. Pour enough oil into a wok or deep-fryer to fill by 1/3. Heat over medium-high heat until a little pastry dropped into the oil sizzles and rises to the surface immediately Cook the banana spring rolls in 2 batches in the hot oil, turning once, for 2-3 minutes or until golden. Drain on paper towel. Allow to cool for a few minutes before sprinkling with icing sugar to serve.
