  1. 30g unsalted butter
  2. 1 small onion, chopped
  3. 2 tablespoons plain flour
  4. 1 cup (250ml) Massel chicken style liquid stock
  5. 1 cup (250ml) gravy
  6. 1/3 cup (80ml) dry white wine
  7. 1/4 cup (60ml) dry marsala (fortified wine)

The instruction how to make Make-ahead marsala gravy

  1. Melt butter in a pan over medium heat. Cook onion for 5 minutes or until starting to colour. Add flour and stir for 30 seconds, then stir in gravy, stock and wine. Bring to the boil, then simmer over low heat for 5 minutes. Add marsala, cook for 1 minute and season. Keep chilled, then warm over medium heat to serve.
