A quick and easy dish which is full of goodness and flavour. Serve it for lunch or dinner.

The ingredient of Turkey and rice noodle salad

  1. 125g vermicelli noodles
  2. 4 cups cooked turkey, shredded
  3. 1 bunch mint, leaves picked
  4. 1 bunch coriander, leaves picked
  5. 4 spring onions, shredded
  6. 1 long green chilli, chopped
  7. 1 cup coconut milk
  8. 1/4 cup fresh lime juice
  9. 1 tablespoon Coles brown sugar

The instruction how to make Turkey and rice noodle salad

  1. Place noodles in a large heatproof bowl and cover with boiling water. Soak according to packet directions. Drain and place in a large salad bowl. Add turkey, mint, coriander, onion and chilli.
  2. To make the Coconut Dressing: Combine coconut milk, lemon juice and brown sugar. Pour over salad and toss to combine.
