  1. 2 tablespoons peanut oil
  2. 500g Coles RSPCA Approved chicken breast fillets, sliced
  3. 1 red onion, cut into wedges
  4. 200g snow peas, trimmed
  5. 1 red capsicum, seeded, chopped
  6. 515g Kan Tong Sweet & Sour Cooking Sauce
  7. 1/2 x 440g can pineapple pieces in natural juice, drained
  8. 400g can baby corn spears, drained
  9. 2 x 250g pkts Uncle Benu2019s Express Special Fried Rice
  10. 2 tablespoons Kikkoman Naturally Brewed Soy Sauce
  11. 1/2 cup (60g) frozen peas
  12. 1 spring onion, sliced diagonally
  13. Coriander leaves, to serve

The instruction how to make Sweet and sour chicken with fried rice

  1. Heat half the oil in a large frying pan over medium-high heat. Add the chicken and cook, stirring occasionally, for 5 mins or until browned.
  2. Add the onion, snow peas and half the capsicum to the pan and cook, stirring occasionally, for 3 mins or until vegetables start to brown. Add the cooking sauce and pineapple and stir to combine. Cook for 2 mins or until heated through.
  3. Meanwhile, heat the remaining oil in a medium frying pan over medium heat. Add the corn and remaining capsicum and cook for 2 mins or until starting to brown. Add the rice, soy sauce and peas and stir to combine. Cook for 2 mins or until heated through. Add the spring onion and stir to combine.
  4. Sprinkle the sweet and sour chicken with coriander leaves and serve with the fried rice.
