Tandoori lamb salad


Give a tandoori twist to barbecue lamb with this simple marinade. Serve on a bed of crunchy salad, pappadums and drizzle with mango chutney for maximum effect.

The ingredient of Tandoori lamb salad

  1. 2 tablespoons tandoori paste
  2. 1 tablespoon natural yoghurt
  3. 2 (about 420g) lamb eye of loin (backstrap)
  4. Salt & freshly ground black pepper
  5. 2 baby cos lettuces, leaves separated, washed, dried
  6. 1 Lebanese cucumber, halved lengthways, thinly sliced diagonally
  7. 1 red capsicum, halved, deseeded, thinly sliced
  8. 1 small red onion, halved, thinly sliced
  9. 80g (1/2 cup) roasted salted cashews
  10. 1 x 75g pkt Pataks mini pappadums
  11. 1/2 cup fresh coriander leaves
  12. 1/2 cup fresh mint leaves
  13. 1 teaspoon cumin seeds
  14. 2 tablespoons peanut oil
  15. 2 tablespoons mango chutney
  16. 1 tablespoon fresh lemon juice
  17. Salt & freshly ground black pepper

The instruction how to make Tandoori lamb salad

  1. Combine the tandoori paste and yoghurt in a large glass or ceramic bowl. Add the lamb and turn to coat. Set aside for 10 minutes to develop the flavours.
  2. Meanwhile, to make the dressing, heat a frying pan over high heat. Add cumin seeds and cook, tossing, for 1-2 minutes or until aromatic. Place the cumin seeds, oil, mango chutney and lemon juice in a screw-top jar and shake until combined. Taste and season with salt and pepper.
  3. Preheat a barbecue grill or chargrill pan on high. Season lamb with salt and pepper. Cook on grill for 3-4 minutes each side for medium or until cooked to your liking. Transfer to a plate and cover with foil. Set aside for 5 minutes to rest. Thinly slice across the grain.
  4. Combine the lettuce, cucumber, capsicum, onion, cashews, pappadums, coriander and mint in a serving bowl. Add the lamb, drizzle with mango chutney dressing and gently toss to combine. Serve immediately.
